Crawdaddy's Lowcountry Boil

This week’s Business Highlight is on Crawdaddy’s Lowcountry Boil, owned and operated by Phillip and Beth Cole of Walterboro.

Food trucks have been around since the late 19th century, but really gained traction during the recession in 2008. Food Network even has a show about them, The Great Food Truck Race which started in 2010, and its newest season began in June of this year. The Cole’s Crawdaddy’s Lowcountry Boil had its grand opening in June of 2023 and is heading toward a steaming first year of success.

A lot of good ideas happen over food and Crawdaddy’s was no exception. While out with a friend at a seafood place in Charleston. They “just started talking saying we should do a food truck with the same kind of food.” Phillip shared that he had talked about a hot dog cart for years with the idea to go where the money and the people are. Finally, his friend told him he didn’t want to hear about it anymore until he bought a trailer. So, that’s what Phillip did. He bought a trailer, and four years after that dinner in Charleston Crawdaddy’s Lowcountry Boil arrived on the food truck scene.

There is always a learning curve when someone starts anything new, especially when starting a business. There is the not only the economic factors, but there is also perfecting the menu, finding what works and what doesn’t in the “kitchen”, and just learning the business all around. However, it looks like Crawdaddy’s has turned that curve and is going forward.

While they live and do business here in Colleton County, they do travel. They have set up in the Tri-County Area, St. George, Lexington County, and Port Royal in Beaufort County.

Naturally, the Coles focus on continuing to learn the crowds and expand their business.

Currently their most popular dish on the menu is the “CrabDaddy Boil” which features 1/2 lb. of snow crab legs, 1/2 lb. of shrimp, 1/2 lb. of sausage, corn on the cob, and baby potatoes. However, if that doesn’t strike your fancy, they have other delicious options to choose from. They also serve drinks and have different flavors of cheesecake on the dessert menu.
